Super Natural Cooking by Heidi Swanson
This would top the list as my favorite cookbook if I had to choose one.  Heidi makes cooking with natural ingredients super easy and her book is filled with awesome recipes. She will have a new cookbook, Super Natural Everyday, out soon. Her blog, 101 Cookbooks,  is a favorite of mine as well. 

Veggie Burgers Every Which Way by Lukas Volger
This is a new acquisition to my cookbook collection, but quickly becoming a favorite.  If you're stuck in a bean burger rut, this book has tons of options.

Veganomicon by Isa Chandra Moskowitz & Terry Hope Romero
This is a great resource for vegetarians and vegans.  

Teany Book by Moby and Kelly Tisdale
I found this book on Paper Back Swap.  This cookbook has recipes and stories from Moby and Kelly's restaurant, Teany, in NYC.

The 150 Healthiest Foods on Earth by JonnyBowden
Jonny Bowden is a Certified Nutrition Specialist.  This is not a cookbook, but a reference of the benefits of healthy foods.
